It is just the perfect sweet dish to be relished post dinner. Talking about the nutritional value of carrot halwa, it contains proteins, carbohydrates and fat content. And also very few of you must be aware of yet another fantastic dessert, Carrot Kheer recipe which i'm going to share shortly.
Preparation of Carrot Halwa:
You may need:
Shredded carrot - 2 cups
Evaporated Milk- 1 1/2 cup (Store bought CARNATION Evaporated MILK)
Sugar - 1/4 cup
Cardamom powder - 1/2 teaspoon
Unsalted butter/ghee - 4 tablespoons
Cashews and raisins to garnish
Evaporated Milk- 1 1/2 cup (Store bought CARNATION Evaporated MILK)
Sugar - 1/4 cup
Cardamom powder - 1/2 teaspoon
Unsalted butter/ghee - 4 tablespoons
Cashews and raisins to garnish
Directions:
...Roast the cashews and raisins in a little ghee and keep it aside.
...In a nonstick pan melt the butter/ghee and stir fry the shredded carrot on medium heat for about 10minutes so that the carrots leave the raw smell and slightly change the colour.
...Take care the carrots do not get burnt.
...Add the evaporated milk and cook for about 10-15 minutes until the milk gets completely absorbed.
...Add the sugar and stir well. Cook for 5 more minutes.
...Now add the cardamom powder and cook till the halwa starts leaving the sides of the pan and the ghee starts oozing out.
Serve hot or cold. Chilled dessert tastes yummy. So try this dessert for your next occasion and do let me know your comments.
Another interesting recipe that i was talking about is Carrot kheer. It is also a very simple yet nutritious dessert. This is shared by my friend Raji, i would like to thank her once again for sharing an interesting recipe.

milk: 500ml
sugar: 1/4cup
almonds, cashews, raisins: to garnish
Directions:
...Soak almonds,cashews and raisins in water for 10-15 mins.
...Boil milk on a low flame.
...Add sugar followed by the ground paste and stir.
... Serve chilled kheer.
